Easy Mushrooms & Tomatoes on Toast

I love a quick and easy lunch, adding some extra veg into my day and being super delicious at the same time! This mushrooms and tomatoes on sourdough ticks all the boxes…

Let me know in the comments what your fav thing to have on toast would be…


GATHER: (as always I’d recommend organic but you buy to fit your budget)

  • Mushrooms

  • Any type of tomatoes

  • Olive oil

  • Garlic paste

  • Fresh herbs (we used thyme)

  • Sourdough toast


Roughly chop the mushrooms

Add a glug of olive oil to a non-stick pan

Throw in the mushrooms and tomatoes and start to cook

Chop some fresh herbs and slice your bread

Add a squeeze of garlic paste to your taste and the herbs to the pan

Push the mushrooms and tomatoes to one side and add the bread to the pan, flipping once toasted on one side

Pile everything onto a plate, adding another glug of fresh olive oil and a few more herbs to the top.
