Perfectly Herby Potatoes
This recipe first appeared in our mini mag, we thought it was about time it got a permenant space on the journal... These are absolutely my favourite way to eat potatoes, don’t get me wrong, I adore Mike’s mash and his perfect home cooked chips but these are just on another level… when new potato season arrives, I often do a little happy dance! These are honestly incredible with a good jersey royal, but any new potato will do.
FLEXITARIAN ALTERNATIVE OPTION
If you follow us on Instagram or YouTube you will know we are trying to live a more plant based lifestyle, these are vegan on their own, its just the addition of vegan mayo which you may want to swap for normal or homemade mayo.
SERVES 2 OR 3
FOR THE POTATOES:
Extra virgin olive oil (please try and purchase in a glass bottle)
3 garlic cloves
Fresh herbs (I tend to use rosemary, thyme & wild garlic if it’s in season)
FOR THE DIP:
Mayo (please try and purchase a jar rather than squeezy plastic bottle)
1 or 2 cloves of garlic
We don’t wash potatoes unless they are fresh from ground, so wash if needed and place in a pan of salted boiling water, add in the three garlic cloves peeled and boil until they are soft.
Pre-heat the oven to 190°c
Drain the potatoes and add them to an oven proof dish, give them a good coating in extra virgin olive oil and sea salt, be sure to bash them about a bit.
Pop in the oven for around 15 minutes, or until golden and crispy on the outside.
While they are cooking, chop your herbs and thyme, we like ours quite fine.
Add a good couple of dessert spoons of mayo to a dish, use a garlic crush to add 1 or 2 cloves of garlic to the mayo. I’d start with one because it can get strong quick! Add some of your diced thyme and give it a good mix.
Bring the potatoes out of the oven and toss them around in their olive in, make sure they are well coated, throw in the herbs and give them all a good mix around, don’t worry about bashing your potatoes!
Serve alongside the dip and enjoy!
